Join cheese authority and Planet Cheese publisher Janet Fletcher for this deep dive into the world of fresh ricotta. Learn to make creamy, fluffy fresh ricotta better than any you can buy. You will taste Janet’s luscious homemade ricotta, then watch her demonstrate how to make it at home. (You can do it!) Then you’ll leap in and prepare a dinner menu that puts this fabulous ricotta front and center. Janet is the co-author, with Rosetta Costantino, of My Calabria: Rustic Family Cooking from Italy’s Undiscovered South, and she learned to make ricotta from Rosetta’s mother.
