The Périgord is an area of south west France once called Aquitaine. Famous for it's prehistoric cave paintings, picturesque villages, ancient chateaux and of course it's gastronomy.
Local ingredients include the famous Périgord truffles, foie gras, cepes (porcini), wonderful produce and excellent cheeses, walnuts and prunes.
Regional dishes include cassoulet, duck confit, Sarladaises potatoes, frozen prune and Armagnac mousse, and apple pancakes with eau de vie.
This is also the region where chef Malcolm Jessop once lived, and at the time of this class will have just returned from his “vacances” in his favorite part of France (hopefully with some treats to share!).
